Combine softened cream cheese, granulated sugar, and lemon juice in a medium mixing bowl. Beat on medium speed using a hand mixer until smooth and creamy. Gently fold in diced strawberries until evenly incorporated.

Arrange egg roll wrappers on a clean work surface. Place 2 to 3 tablespoons of the cream cheese mixture in the center of each wrapper.
