# What You'll Need:

→ Cookie Dough

01 - 1 large egg
02 - 1 teaspoon baking powder
03 - 1/4 cup melted butter (cooled)
04 - 200 grams all-purpose flour (about 1 1/2 cups plus 2 tablespoons)
05 - 3 1/4 tablespoons granulated sugar
06 - A pinch of salt, or 1/4 teaspoon if butter is unsalted
07 - 4 tablespoons whole or 2% milk
08 - Zest from 1 lemon

→ Lemon Glaze

09 - 1 to 2 cups powdered sugar
10 - 1 tablespoon milk
11 - 1 tablespoon fresh lemon juice

# Preparation Steps:

01 - Preheat the oven to 300°F (150°C). Line a big tray with parchment paper.
02 - In a large bowl, stir together the flour, baking powder, salt, sugar, and lemon zest. Make a small dip in the center, then add the egg, butter, and milk. Use a fork to mix until it just holds together, then gently press it into a smooth dough on a flat surface.
03 - Twist the dough into rings or knots about 5-6 inches long after rolling them into long ropes. Lay them out on the parchment paper.
04 - Bake for 15-18 minutes until the edges are barely golden. Leave them to cool down completely before adding the glaze.
05 - Sift your powdered sugar, then whisk it with milk and lemon juice until it’s the right consistency. Drizzle over the cooled cookies or add finishing sugar instead.

# Additional Tips:

01 - Switch the butter to light olive oil if you like
02 - Store sealed at room temperature for up to a week
03 - Dough can be frozen for up to 3 months
04 - You can bake these at 350°F for about 13 minutes instead
