# What You'll Need:

→ Quick-Pickled Onions

01 - Juice of 1 lime or lemon
02 - Salt and pepper, adjust to taste
03 - 1/2 red onion, thinly sliced

04 - 3/4 cup fat-free Greek yogurt (Fage is a good option)
05 - Softened cream cheese, 4 ounces

12 - 1 loaf sourdough, pre-sliced

14 - Half a lemon, juiced
15 - A 6-ounce bag of baby spinach leaves
16 - 1 pack of sprouts or microgreens
17 - 2 ripe avocados (or one large one)
18 - 2 big heirloom tomatoes
19 - 1 long English cucumber, cut into thin slices
20 - 6 optional slices of creamy Havarti cheese

# Preparation Steps:

01 - In a dish, toss the sliced onion with lime or lemon juice, salt, and some pepper. Leave it for a bit, stirring now and then to soften.
02 - Whisk the softened cream cheese until smooth. Stir in yogurt, herbs, onion powder, salt, and pepper. Mix it all till creamy.
03 - Position the oven rack close to the broiler. Spread butter on each slice and broil for a few minutes, just until golden. Keep an eye on it to stop it from burning.
04 - Cut the tomatoes and season them lightly. Let them sit on a paper towel for a minute. Mash the avocado with some lemon juice and a dash of salt. Slice the cucumber super thin.
05 - On one side of toasted bread, add the cream cheese spread. Layer mashed avocado on the other side. Stack on the veggies: tomatoes, cucumbers, pickled onions, sprouts, spinach, and cheese if you're using it. Slice and enjoy.
