Allow the wrapped cooked ham to rest at room temperature for approximately 2 hours to ensure even reheating.

Preheat the oven to 325°F. Unwrap the ham and set it in a large roasting pan.

In a small bowl, mix the black pepper, cayenne, allspice, onion powder, kosher salt, dried thyme, 2 teaspoons brown sugar, chipotle chili powder, garlic powder, smoked paprika, and ground cinnamon. Massage this rub thoroughly over the surface of the ham for complete coverage.

Cover the ham tightly with aluminum foil and bake for 1 hour and 30 minutes.

In a medium saucepan over medium-high heat, combine 1/2 cup brown sugar, maple syrup, bourbon or rum if using, finely chopped chipotle chiles, and pineapple juice. Bring to a boil, then reduce to a simmer and cook 10 to 15 minutes, stirring often, until reduced by half. Remove from heat and set aside.

After 1 hour and 30 minutes, raise oven temperature to 400°F. Generously brush the ham with pineapple chipotle glaze. Arrange diced pineapple around the ham in the pan or secure with toothpicks onto the ham.

Place the ham back in the oven uncovered and bake for an additional 25 to 30 minutes until caramelized and thoroughly heated.

Remove ham from the oven and let it rest for 5 minutes before slicing. Serve warm with extra glaze on the side.
