Warm up your oven to 375°F and boil the shells till they're firm but not crunchy, following the box directions

Pour oil into a big pan, throw in chopped onion and cook till soft (about 3-4 mins), then toss in garlic and stir for another minute

Toss your spinach into the pan and stir until it shrinks down, roughly 2 mins

Mix your cooked veggies with all cheeses, the egg, salt, and pepper in a big bowl

Pour half your sauce across the bottom of an 8x8 or 9x9 dish

Pack each shell with your cheese-spinach mix and line them up in your dish

Pour the rest of your sauce on top and cook for 20-30 mins till everything's hot and bubbly

Sprinkle with fresh basil and extra parmesan if you want, and enjoy while hot
