Cheesy Mushroom Garlic Pasta (Printable Version)

# What You'll Need:

→ Base

01 - 4 ounces dry pasta
02 - 1 tablespoon extra virgin olive oil
03 - 3 tablespoons unsalted butter, split
04 - 1/2 medium onion, diced
05 - 8 ounces sliced cremini mushrooms
06 - 3 cloves garlic, finely chopped
07 - 1/2 teaspoon Dijon mustard

→ Sauce

08 - 1/4 cup veggie or chicken stock, or white wine
09 - 1/2 teaspoon fresh lemon juice
10 - Grated peel from 1/2 lemon
11 - 1/2 cup grated fresh parmesan
12 - 2 tablespoons fresh parsley, chopped
13 - Salt and pepper for seasoning

# Preparation Steps:

01 - Cook pasta in well-salted water till firm to bite
02 - Get onions and mushrooms golden in the oil and some butter for about 8-10 minutes
03 - Add leftover butter, minced garlic, and Dijon. Let cook briefly
04 - Pour in stock and lemon. Let bubble for a minute
05 - Remove from heat, mix in cheese, herbs, and a splash of pasta water. Combine with noodles

# Additional Tips:

01 - You can make twice as much but the mushrooms will need extra time to brown
02 - Makes enough for 2 people as a full meal or 4 as a side dish
