Set oven to 375°F (190°C) and line a baking sheet with parchment paper.

Combine softened cream cheese, granulated sugar, vanilla extract, and egg yolk (if using) in a bowl. Mix until smooth.

Unroll crescent dough onto a lightly floured surface. Press perforations together to seal seams if necessary.

Cut dough into triangles or squares. Place 1 to 2 tablespoons of cheese filling onto the center of each piece.

Fold dough over filling and pinch edges firmly to seal.

Arrange pastries on prepared baking sheet. Bake for 12 to 15 minutes until golden brown.
