Place two slices of rye on a flat surface. Spread shredded cheese on each, then pour thousand island dressing right over it. Add a layer of sliced pastrami or corned beef, followed by sauerkraut on top. Cap each with another slice of bread and smear a tablespoon of softened butter over the outside of the top slice.

Put a skillet on medium heat. Lay the sandwiches in, buttered side facing down. Let them brown for about 3 minutes until crusty and golden. Butter the top slices while in the pan, flip the sandwiches over carefully, and cook for another 2-3 minutes so the cheese melts and both sides crisp up.

Dig in right away while they're hot, with the cheese all gooey and melty.
