Classic Reuben Sandwich (Printable Version)

# What You'll Need:

01 - 4 tablespoons of softened unsalted butter
02 - ½ pound of corned beef or pastrami, sliced thin
03 - 1 cup of sauerkraut, well-drained
04 - 4 slices of rye, preferably dark
05 - 1 cup of shredded Swiss cheese
06 - 4 tablespoons of thousand island dressing

# Preparation Steps:

01 - Place two slices of rye on a flat surface. Spread shredded cheese on each, then pour thousand island dressing right over it. Add a layer of sliced pastrami or corned beef, followed by sauerkraut on top. Cap each with another slice of bread and smear a tablespoon of softened butter over the outside of the top slice.
02 - Put a skillet on medium heat. Lay the sandwiches in, buttered side facing down. Let them brown for about 3 minutes until crusty and golden. Butter the top slices while in the pan, flip the sandwiches over carefully, and cook for another 2-3 minutes so the cheese melts and both sides crisp up.
03 - Dig in right away while they're hot, with the cheese all gooey and melty.

02 - Pick a dense, dark rye bread so the filling stays secure and the bread doesn’t crumble.
03 - Press the liquid out of the sauerkraut so it doesn’t soak the bread.
