Grease a 9x13 dish with butter, then leave it alone for now.

Put the sugar, corn syrup, cream, and butter into a big saucepan. Stir all the time on medium heat until the temperature hits 240°F (takes up to half an hour).

Take it off the stove and mix in the red food dye and cinnamon oil.

Pour the hot mixture into your buttered dish. Let it cool down at room temperature for a bit, then pop it in the fridge so it can firm up.

Before cutting, let it rest for 10-15 minutes at room temperature. Wrap the pieces in wax paper to keep them fresh.
