Heat olive oil in a large skillet over medium-high heat. Add sliced smoked sausage and cook until both sides are golden brown. Remove sausage and set aside.

In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.

Pour in chicken broth and milk, scraping up any browned bits from the bottom of the pan. Stir in ranch seasoning mix and bring to a gentle simmer.

Add rotini pasta to the pan, making sure most of it is submerged. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is al dente.

Reduce the heat to low and gradually stir in shredded white cheddar cheese until the sauce is smooth and creamy.

Fold in baby spinach and chopped roasted red peppers. Cook just until the spinach is slightly wilted.

Return browned sausage to the skillet and stir to combine all ingredients. Season with salt and black pepper to taste. Serve warm.
