Get your oven hot at 400°F and put parchment on your baking tray.

Mix your sausage with the cheddar, panko, 1 egg, and thyme leaves.

Beat the other egg with a splash of water.

Unfold pastry sheets and slice each one into two long pieces.

Spread sausage mixture down the middle of strips. Coat one edge with Dijon, the other with beaten egg.

Fold pastry over the filling and press to stick. Put seam side down.

Make shallow cuts on top and slice into 1 1/2 inch pieces.

Paint with egg mixture, sprinkle with bagel seasoning. Bake for 18-20 minutes till brown and puffy.
