Boil the manicotti following the package instructions. Drain well, then lay them out individually to cool on parchment paper.

Set the oven to 350°F. Spray a 9x13 pan lightly and coat the base with a thin layer of marinara sauce.

Blend together ricotta, mozzarella, Parmesan, eggs, parsley, pepper, and salt until evenly mixed and smooth.

Using your hands, a bag, or a spoon, carefully fill both ends of the cooled manicotti tubes with the cheese mixture.

Place the stuffed manicotti in a single layer on the marinara. Spread the leftover sauce evenly over the top.

Cover pan with foil and bake for 40 minutes. If you'd like, sprinkle extra mozzarella on top, then bake uncovered for another 5-10 minutes until melted.
