Apple Brie Chicken (Printable Version)

# What You'll Need:

→ Stuffing & Chicken

01 - 4 boneless chicken breasts
02 - 1 teaspoon of kosher salt
03 - 1/2 teaspoon of black pepper
04 - 1 Honeycrisp apple, sliced into thin moon shapes
05 - 4 ounces brie cheese, sliced thin while cold

→ Glaze with Apple Cider

06 - 1 cup of apple cider or juice
07 - 2 tablespoons maple syrup
08 - 1/2 tablespoon garlic, minced (about 2 cloves)
09 - 1 teaspoon Dijon mustard
10 - 2 teaspoons fresh thyme leaves
11 - 1/2 teaspoon kosher salt

# Preparation Steps:

01 - Preheat your oven to 375°F. Either line a baking sheet with parchment or grease up a broil-friendly skillet with nonstick spray.
02 - Using a horizontal cut, butterfly each chicken breast. Don’t cut all the way through. Sprinkle the inside with salt and pepper, add 7-9 apple slices, and top with 3-4 slices of brie. Close them up snugly.
03 - Place the stuffed chicken breasts on the prepared pan and bake them for 25-30 minutes, stopping just before they’re fully done.
04 - Throw all the glaze ingredients into a small saucepan on medium heat. Let it bubble gently until it thickens, about 12-15 minutes.
05 - Switch your oven to broil. Coat the baked chicken with the glaze using a brush, and broil for 10-12 minutes or until a thermometer reads 165°F inside. Serve hot with extra glaze on top.
