Use a food processor to turn freeze-dried strawberries into fine powder.

Beat the butter with vanilla for 2 minutes. Add powdered sugar and mix for another 2 minutes until it's light and fluffy.

Add salt and flour to the dough, then mix in the strawberry powder. The dough will feel a little crumbly.

Shape the dough into a ball. Roll it flat between two sheets of floured parchment paper to ¼-inch thick, then refrigerate for 1 hour or freeze for 30 minutes.

Use cutters to make shapes, keeping cookies 1 inch apart on the baking sheet. Bake at 350°F for 10-12 minutes. Roll scraps again and chill if needed.

Blend fresh strawberries until smooth. Stir the puree with powdered sugar until mixed well.

Once the cookies are cool, dip them in glaze. Sprinkle crushed freeze-dried strawberries on top if you'd like, and let them set on a rack.
