Spicy Shrimp Sushi Bowl (Printable Version)

# What You'll Need:

→ Shrimp

01 - A pound of peeled and clean shrimp
02 - 1/3 cup mayo
03 - Two tablespoons of sweet chili sauce
04 - Two teaspoons sriracha for spice
05 - Juice squeezed from half a lime
06 - Just a little sprinkle of salt

→ Sushi Rice

07 - Two cups short-grain sushi rice
08 - Water for cooking (2 cups)
09 - 3 tablespoons sweet rice wine (mirin)
10 - A couple of teaspoons of sugar
11 - Three-fourths teaspoon of salt

→ Assembly

12 - 1 carrot, shredded finely
13 - Half a bunch of green onions, chopped
14 - Cubed avocado (1 whole one)
15 - Cucumber slices, cut nice and thin
16 - A handful of shelled edamame
17 - Toasted sesame seeds
18 - Crunchy onions for topping
19 - Crushed peanuts for extra crunch

# Preparation Steps:

01 - Grab a whisk and combine the mayo, chili sauce, lime juice, sriracha, and a bit of salt. Set it aside once smooth.
02 - Cook the shrimp in boiling water for one minute, drain it well, chop it into smaller pieces, and toss with half the sauce you made before.
03 - Wash the rice until the rinse water isn’t starchy anymore. Cook for about 15 minutes, then let it sit covered for 10. Stir in the mirin mixture (with sugar and salt warmed up beforehand).
04 - Drizzle edamame with sesame oil and add a pinch of salt. Toss cucumber in a splash of mirin. Chop green onions and slice up the carrots thinly.
05 - Start by placing rice at the bottom. Add shrimp, diced avocado, veggies, sesame seeds, crispy onions, peanuts, and drizzle with leftover sauce.
