Spiced Coffee Oat Treats (Printable Version)

# What You'll Need:

01 - Whole rolled traditional oats (2 cups/170g).
02 - Plain flour (1 2/3 cups/210g).
03 - Coffee powder (2 teaspoons).
04 - Baking soda (1 teaspoon).
05 - Salt (1/4 teaspoon).
06 - Powdered ginger (1 teaspoon).
07 - Ground cinnamon (1 teaspoon).
08 - Fresh ground nutmeg (1/4 teaspoon).
09 - Crushed cloves (1/8 teaspoon).
10 - Soft unsalted butter (3/4 cup/170g).
11 - Packed brown sugar, any shade (1 cup/200g).
12 - Regular white sugar (1/4 cup/50g).
13 - One big egg at room temp (1).
14 - Regular or dark molasses (1/4 cup/75g).
15 - Chopped white chocolate blocks (8 ounces/226g).
16 - Cooking oil or melted coconut oil (1 teaspoon).
17 - Coffee powder for finishing (1/2 teaspoon).
18 - Nutmeg and cinnamon for dusting.

# Preparation Steps:

01 - Give oats about 10-12 quick pulses in your food processor until you get different sizes with some powder.
02 - In a medium bowl, stir together the ground oats, flour, coffee powder, baking soda, salt, and all your spices.
03 - Using medium-high speed, beat the butter with both sugars for about 2 minutes until fluffy. Then add your egg and molasses and beat another minute.
04 - On low speed, slowly add your dry mix into the wet ingredients. Put the dough in the fridge for 30-45 minutes.
05 - Roll dough into 1.5 tablespoon balls and put them 3 inches from each other. Cook at 350°F for 12-13 minutes until the edges turn light brown.
06 - Mix melted white chocolate with oil and coffee powder. Dunk half of each cooled cookie in this mix, add a sprinkle of spices, then chill until firm.

01 - Always pick chocolate bars instead of chips - they melt way better.
02 - You can make your dough up to 3 days early and keep it cold.
03 - Skip the blackstrap type of molasses for this recipe.
