Ginger Cookies with Cheesecake (Printable Version)

# What You'll Need:

01 - 6 oz cold cream cheese.
02 - 3 tablespoons white sugar.
03 - 1/2 teaspoon pure vanilla.
04 - 6 tablespoons sugar for coating.
05 - 1/2 teaspoon ginger powder.
06 - 1/2 teaspoon cinnamon powder.
07 - 1/8 teaspoon each of allspice, nutmeg, cloves.
08 - 2 1/2 cups plain flour.
09 - 2 1/2 teaspoons each of ginger and cinnamon.
10 - 1/2 teaspoon table salt.
11 - 1/2 teaspoon baking soda.
12 - 3/4 cup soft unsalted butter.
13 - 3/4 cup packed brown sugar.
14 - 2 egg yolks at room temp.
15 - 1/3 cup dark molasses.

# Preparation Steps:

01 - Whip the cream cheese with sugar and vanilla till light. Shape into 18 small balls then pop in freezer.
02 - Stir sugar with all the spices in a bowl.
03 - Combine dry stuff first. Beat butter with sugar until fluffy, drop in eggs and molasses, then add your dry mix.
04 - Grab some dough, press flat, put a frozen filling ball in middle, fold dough over it and roll in your spicy sugar.
05 - Put just 6 cookies on each tray and bake at 350°F for about 11-12 minutes.
06 - Let them sit on the tray for 10 minutes before moving to a cooling rack.
