Soy Garlic Eggplant (Printable Version)

# What You'll Need:

01 - 1 big eggplant

→ Sauce

02 - 2 tablespoons garlic, finely chopped (about 3 cloves)
03 - 2 tablespoons low-sodium soy sauce
04 - 2 tablespoons sugar
05 - 1 tablespoon spicy chili oil (optional)
06 - 2 tablespoons avocado oil

# Preparation Steps:

01 - Cut the eggplant into slices about half an inch thick. Make small cuts in the middle to let the sauce soak in.
02 - In a shallow dish, combine avocado oil, chopped garlic, sugar, soy sauce, and chili oil if you're using it.
03 - Lay eggplant slices on parchment paper inside an air fryer. Pour sauce over them. Air fry at 350°F for 15 minutes, and broil for 2 extra minutes if you want it crispy.

# Additional Tips:

01 - Can also bake at 375°F for 30 minutes if you'd rather use the oven.
