Cut the eggplant into slices about half an inch thick. Make small cuts in the middle to let the sauce soak in.

In a shallow dish, combine avocado oil, chopped garlic, sugar, soy sauce, and chili oil if you're using it.

Lay eggplant slices on parchment paper inside an air fryer. Pour sauce over them. Air fry at 350°F for 15 minutes, and broil for 2 extra minutes if you want it crispy.
