Smothered Chicken Southern (Printable Version)

# What You'll Need:

01 - 1 lb chicken legs or thighs.
02 - 1 cup whole milk.
03 - 1 1/2 cups plain flour.
04 - 1 teaspoon black pepper, ground.
05 - 1 teaspoon paprika, smoked.
06 - 1 tablespoon garlic powder.
07 - 1 teaspoon salt.
08 - 1 tablespoon onion powder.
09 - 1 teaspoon celery seeds.
10 - 1 teaspoon poultry spice.
11 - 1/4 cup cooking oil.
12 - 2 teaspoons chopped garlic.
13 - 2 cups chicken stock.
14 - 1 medium chopped onion.

# Preparation Steps:

01 - Rinse the chicken well and pat it dry.
02 - Combine the flour with every seasoning in a large mixing bowl. Put some aside for later use with the gravy.
03 - Make sure every piece of chicken is coated thoroughly with the seasoned flour mix.
04 - In a large pan, heat oil and fry chicken until it's golden and crispy. Take out and set aside.
05 - Sauté the onions for 2 minutes in the same pan. Toss in the garlic and cook about a minute more before removing.
06 - In the pan drippings, stir in the flour you saved earlier. Gradually add chicken broth and milk, mixing until smooth and creamy.
07 - Place the chicken back into the pan, along with the sautéed garlic and onions. Let it cook covered for 30-35 minutes, flipping the chicken as needed.

# Additional Tips:

01 - Avoid crowding the pan so the chicken browns better.
02 - Keep extra seasoned flour to thicken the gravy.
03 - Flip the chicken while it simmers to ensure even cooking.
