Crispy Smashed Potatoes (Printable Version)

# What You'll Need:

→ Base with Sweet Potatoes

01 - 3 large or 4 medium sweet potatoes, go for the wider ones to get great smash results
02 - Spray-on light olive oil, helps get them crisped up nicely

→ Garlic Butter Layer

03 - Butter, 3 tablespoons, melted until it turns golden brown
04 - 4 fresh garlic cloves, finely crushed
05 - 1 tablespoon of finely chopped fresh parsley
06 - Fresh ground black pepper and kosher salt to taste
07 - 2 tablespoons of freshly grated Parmesan cheese

# Preparation Steps:

01 - Preheat your oven to a high broil setting. While it's heating, cut your sweet potatoes into thick chunks (roughly 1 1/2-inch pieces) after trimming the ends.
02 - For foolproof caramelization, boil in salted water for 20-25 minutes, covered, until just tender enough to pierce. Or, roast them for around 25-30 minutes till they soften. Cool slightly for easier handling, whatever method you choose.
03 - Spray a baking sheet lightly with oil. Spread the sweet potato pieces out and gently press them down using a fork, taking care not to break them apart.
04 - Mix parsley, melted butter, and crushed garlic together. Drizzle this mixture across all the potatoes, sprinkle on salt and pepper, and give them a quick mist of olive oil.
05 - Broil for around 15 minutes or until a crisp golden top forms. Sprinkle Parmesan over them and put them back in just long enough for the cheese to melt beautifully.
06 - Dust with parsley and add a small pinch of salt right before offering these crispy-tender gems to your guests!
