Saucy Easy Ramen (Printable Version)

# What You'll Need:

→ Noodles

01 - Two packs of plain instant noodles (around 140g total)

→ For Cooking

02 - 10 oz sliced mushrooms, diced tofu, or veggies of your choice

→ Sauce

03 - 1 cup vegetable broth or water
04 - 5-7 tablespoons of soy sauce
05 - 1.5 teaspoons dark soy sauce (optional, for a richer color)
06 - 2 to 3 tablespoons cornstarch
07 - 1-3 tablespoons of liquid sweetener, sugar, or maple syrup
08 - 2 tablespoons of lemon juice, rice vinegar, or white vinegar
09 - 1/4 teaspoon ground black pepper
10 - 1/2 tablespoon of chili garlic paste (optional)
11 - 1 tablespoon sesame oil
12 - 2 minced garlic cloves (optional)

→ Toppings

13 - Sliced scallions
14 - Sesame seeds

# Preparation Steps:

01 - Stir together all the sauce ingredients till smooth. Tweak the taste as needed and place aside.
02 - Bring water to a boil, cook noodles until they're underdone (2-3 minutes less than the instructions suggest). Drain, rinse with cold water if you like.
03 - Warm a pan on medium-high, drizzle some oil. Stir-fry mushrooms, tofu, or vegetables till they're cooked through.
04 - Re-stir the sauce, pour it into your pan, and simmer gently over medium heat while stirring. In about 2-3 minutes it should thicken up.
05 - Add noodles to the pan, mix in the sauce thoroughly. Stir and cook on medium-high till the noodles soak up the sauce and it thickens a bit, roughly 3 minutes.
06 - Taste and tweak seasoning if you need to. Top with sesame seeds and chopped green onions, then eat right away.

# Additional Tips:

01 - Make more sauce if you're adding extra veggies
02 - Use less soy sauce if working with vegetable broth
03 - Start with 2 tablespoons of cornstarch and adjust from there
