Protein Cookie Dough Truffles (Printable Version)

# What You'll Need:

→ Main Components

01 - 1 cup of 2% cottage cheese
02 - 2 tablespoons of a sugar-free maple syrup (like Lakanto)
03 - 1 teaspoon of pure vanilla extract
04 - 1 1/2 cups almond flour (or pre-treated all-purpose flour)

→ Protein & Topping

05 - 1/4 cup vanilla-flavored protein powder (or your favorite flavor)
06 - 1 1/2 cups of sugar-free dark chocolate chips (such as Lily's), divided in two
07 - 1 teaspoon of coconut oil

# Preparation Steps:

01 - Blend the cottage cheese in a food processor or blender until it’s completely creamy.
02 - Reserve 1 cup of chocolate chips for later. In a medium bowl, stir the smooth cottage cheese with the rest of the ingredients until well incorporated.
03 - Stick the dough in the fridge for 30 minutes so it firms up.
04 - Prepare a baking sheet covered with parchment paper. Use a cookie scoop to make evenly sized portions, then roll them into balls. Arrange the balls on the sheet and freeze them for 20 minutes or more.
05 - Melt the saved chocolate chips in the microwave, stirring every 15 seconds to prevent burning. Coat each frozen ball in the melted chocolate, then set them back on the parchment. Chill in the fridge until the chocolate firms up.

# Additional Tips:

01 - If choosing all-purpose flour, it needs to be heat-treated to make it safe to eat.
02 - Try using different protein powder flavors to switch things up.
03 - Keep these stored in the fridge for freshness and the best bite.
