Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper and set aside.

In a large bowl, combine granulated sugar, light corn syrup, melted butter, vanilla extract, and egg. Set aside 2 tablespoons of this mixture for glazing.

Stir chopped pecans into the remaining sugar mixture until fully coated.

Unroll crescent dough and separate into triangles on the prepared baking sheet. Spoon 2 to 3 tablespoons of filling onto the widest end of each triangle and roll towards the tip.

Bake in the preheated oven for 8 minutes until the dough starts to set.

Remove crescent rolls from the oven and brush with the reserved sugar mixture. Return to oven and bake for an additional 5 minutes or until lightly golden.

Remove from oven and, if desired, sprinkle extra chopped pecans on top before serving.
