Lay thawed puff pastry on a lightly floured surface and cut into 3 x 3 inch squares.

In a mixing bowl, combine softened cream cheese, granulated sugar, vanilla extract, and optional lemon juice. Blend until smooth.

Place 1 tablespoon of cream cheese mixture in the center of each pastry square.

Fold corners toward the center (or leave open-faced). Brush edges with beaten egg or milk for shine. Arrange pastries on prepared baking sheet.
