Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.

In a medium bowl, combine flour and powdered sugar. Cut in cold butter until mixture forms coarse crumbs. Firmly press mixture into the bottom of the prepared pan. Bake for 15–20 minutes, or until lightly golden.

While crust bakes, whisk together eggs, granulated sugar, lemon zest, lemon juice, dried lavender, and salt in a medium bowl until fully blended.

Carefully pour filling over the hot crust. Return pan to oven and bake for 20–25 minutes, or until center is set.

Allow bars to cool completely at room temperature. Refrigerate for at least 1 hour. Once thoroughly chilled, dust with powdered sugar, slice into squares, and serve.
