Tasty Tomato Herb Patties (Printable Version)

# What You'll Need:

→ Fresh Produce

01 - 2 big tomatoes, cut into tiny pieces (roughly 250g)
02 - 1/2 red onion, chopped small
03 - 2 big garlic cloves, crushed fine

→ Fresh Herbs & Seasonings

04 - 1/2 bunch fresh dill, snipped small (about 10g)
05 - 1/2 bunch fresh parsley, cut tiny (about 15g)
06 - Zest scraped from 1 lemon
07 - 1/2 teaspoon salt, or add to your liking
08 - Black pepper sprinkled as you want

→ Dry Ingredients

09 - 85g all-purpose flour
10 - 1/2 teaspoon baking powder

# Preparation Steps:

01 - Cut your tomatoes into tiny bits and dump them in a big mixing bowl - they'll form the main part of your fritters.
02 - Toss in your chopped onions, crushed garlic, lemon zest, and all those fresh herbs with the tomatoes. Now stir in your flour, baking powder, salt and pepper until everything sticks together nicely.
03 - Pour enough olive oil to cover the bottom of your pan and warm it on medium heat. Spoon big dollops of your mix into the hot oil, let them cook a few minutes till brown on the bottom, then flip and brown the other side too.
