Line a small sheet pan with parchment paper and brush it evenly with extra virgin olive oil to prevent sticking.

Place the raw sesame seeds in a nonstick pan over medium heat. Stir constantly for 3 to 4 minutes until aromatic and golden brown.

Pour honey into the nonstick pan, return to medium heat, and stir until the honey reaches a gentle boil and bubbles, approximately 3 to 4 minutes or until it approaches 250°F.

Add the toasted sesame seeds back into the pan with bubbling honey and stir constantly for about 5 minutes until evenly coated and fully combined.

Quickly transfer the honey-sesame mixture onto the prepared sheet pan. Using the back of a spoon, parchment paper, or a rolling pin, spread and press the mixture into an even layer.

Let the mixture cool at room temperature for approximately 20 minutes, then cut into bars or squares using a sharp knife.
