Wash and scrub sweet potatoes thoroughly. Cut into 1-inch thick wedges.

In a large bowl, combine olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using.

Add sweet potato wedges to the bowl and toss until wedges are completely coated with the seasoning mixture.

Sprinkle half of the grated Parmesan cheese over the seasoned sweet potatoes and toss again to distribute.

Spread the wedges in a single layer on the prepared baking sheet. Bake for 25 to 30 minutes, flipping once halfway through, until golden brown and crisp on the edges.

Remove from oven and immediately sprinkle the remaining Parmesan cheese over the hot wedges, allowing it to melt slightly.
