Place about 1 teaspoon of lemon mixture in the center of each pastry piece. Fold pastry over filling to form triangles or rectangles, pressing edges to seal and crimp with a fork.

Whisk egg with 1 tablespoon water in a small bowl. Brush egg wash over pastry tops for a golden finish.
