09 - 2 cups red enchilada sauce
10 - 8 to 10 corn or flour tortillas (6 to 8 inch size)

# Preparation Steps:

01 - Preheat oven to 350 degrees Fahrenheit. Evenly spread 1/2 cup of enchilada sauce across the bottom of a 9 by 13 inch baking dish.
02 - Heat olive oil in a large skillet over medium-high heat. Sauté onion and garlic for 2 to 3 minutes until softened.
03 - Add ground beef to the skillet along with cumin, chili powder, salt, and black pepper. Cook until beef is well-browned and no pink remains, breaking it into small pieces. Drain excess fat if necessary.
04 - Stir in about 1 cup of enchilada sauce with the cooked beef. Remove from heat and mix in 1 cup of shredded cheese until melted.
05 - Spoon approximately 1/3 cup of the beef mixture onto each tortilla. Roll tightly and place seam-side down in the prepared baking dish.
06 - Pour remaining enchilada sauce over the rolled tortillas. Sprinkle evenly with the rest of the shredded cheese. Bake for 15 to 20 minutes, until the sauce bubbles and the cheese is melted.
