Spoon approximately 1/4 cup of shredded Monterey Jack cheese onto the parchment-lined baking sheet, creating 8 evenly spaced circles and leaving at least 2 inches between them. Bake in preheated oven for 8 to 10 minutes until the edges are golden brown and the cheese appears lace-like.

Remove the cheese circles from the oven and let cool for 1 minute so they remain pliable but not too hot. Place about 2 tablespoons of the beef mixture on each cheese circle. Gently roll or fold the cheese around the filling to form roll-ups. Let set on the baking sheet for 2 to 3 minutes to maintain their shape as the cheese hardens.
