Find the seam on each date and carefully slice down the middle to make a pocket. Keep one end hooked together.

Grab a plate that can sit in the freezer and line it with parchment paper. Open all the dates to prep for filling.

Scoop your nut butter into each date until it's almost full. Press in a few nuts, then lightly squeeze them shut. Chill in the freezer to firm them up.

While you wait, heat up the chocolate so it's nice and smooth. Let it cool just enough to stick well.

Take out the frozen dates. Dunk each one into the melted chocolate, using two spoons to cover them fully.

Right after dipping, sprinkle sea salt on the wet chocolate. Put them back in the freezer until the chocolate turns solid.
