Crispy Veggie Cheese Bites (Printable Version)

# What You'll Need:

→ Base

01 - One whole cauliflower head
02 - 1 cup regular cottage cheese
03 - Half cup bread crumbs

→ Cheese & Aromatics

04 - Half cup freshly grated parmesan
05 - Chopped scallions (quarter cup)

→ Seasonings

06 - Half teaspoon garlic powder
07 - Half teaspoon onion powder
08 - Half teaspoon salt
09 - Quarter teaspoon black pepper

→ Binding

10 - One whole egg

# Preparation Steps:

01 - Set your oven to 400°F (200°C)
02 - Boil or steam the cauliflower florets until soft, about 5-7 minutes, then drain and let cool a bit
03 - Squash the cooled cauliflower and mix it with the cottage cheese, egg and all seasonings until everything's blended well
04 - Slowly add in bread crumbs until the mix stays together, then shape into small, even-sized tots
05 - Put the tots on a baking sheet lined with parchment and cook for 20-25 minutes until they're crispy and golden
06 - Cool them down a bit before eating
