Rinse fresh spinach thoroughly under cold water and chop into bite-sized pieces. Mince the garlic. Pat the salmon fillets dry and season on both sides with salt and freshly ground black pepper.

Heat olive oil in a skillet over medium heat. Place salmon fillets skin-side down and cook for 4 to 5 minutes until skin is golden and crispy. Flip the fillets and cook an additional 3 to 4 minutes until salmon is cooked through.

In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook for 2 minutes until wilted and bright green.

Pour heavy cream into the skillet and bring to a gentle simmer. Stir in grated Parmesan cheese, salt, black pepper, and optional red pepper flakes. Cook for 2 to 3 minutes until sauce thickens and coats the back of a spoon.

Return the salmon fillets to the skillet, spoon the creamy sauce over the top, and drizzle with fresh lemon juice. Cook for an additional minute to meld flavors before serving.
