11 - 4 cups seafood or chicken broth
12 - 1 cup heavy cream

13 - 1/2 pound cooked crab meat, shells removed
14 - 1/2 pound cooked shrimp, peeled, deveined and cut into bite-sized pieces

→ Finishing Touches

15 - 2 tablespoons sherry, optional
16 - Fresh herbs, such as parsley or chives, for garnish

# Preparation Steps:

01 - Heat the olive oil in a large pot over medium heat. Add chopped onion, celery, and carrot; cook, stirring occasionally, until vegetables are softened, about 5 minutes. Add minced garlic and cook for 1 minute until aromatic.
02 - Stir in tomato paste, paprika, optional cayenne, and a pinch of salt and black pepper. Cook for 2 minutes, allowing flavors to develop.
03 - Sprinkle flour evenly over vegetables and stir until flour is fully combined. Cook for 1 minute to eliminate raw flour taste.
04 - Gradually pour in the seafood or chicken broth, stirring constantly to prevent lumps. Bring soup to a simmer, then lower heat and maintain a gentle simmer for 10 minutes.
05 - Using an immersion blender or standard blender, purée soup until smooth and velvety.
06 - Return soup to pot if needed. Stir in heavy cream and simmer for an additional 10 minutes, stirring occasionally, until thickened slightly.
07 - Gently fold in cooked crab meat and shrimp. Add sherry if desired. Simmer for 5 minutes, just until seafood is heated through.
08 - Taste and adjust seasoning with more salt and black pepper if needed. Ladle bisque into serving bowls and top with fresh herbs to garnish.
