01 -
Place a bowl or container capable of holding 6 cups of liquid in the freezer to chill; this will be used for storing or serving.
02 -
On a cutting board, chop the circus animal cookies into rough pieces. Reserve approximately half a cup of chopped cookies and several whole cookies for garnishing.
03 -
In a large bowl, combine the sweetened condensed milk, vanilla paste or extract, and the majority of the chopped cookies.
04 -
In a separate large bowl, whip the heavy cream with a mixer until firm peaks form.
05 -
Fold about one cup of whipped cream into the condensed milk mixture until just combined. Fold in the remaining whipped cream, taking care not to deflate the mixture.
06 -
Transfer half the mixture back to the second bowl and stir in several drops of pink food coloring until a pastel pink hue matching the pink circus animal cookies is achieved.
07 -
Remove the chilled serving container from the freezer. Layer the uncolored mixture, sprinkle with nonpareils and optional extra cookie pieces, then add a layer of the pink mixture and additional sprinkles. Alternate remaining mixtures and garnishes to fill the container.
08 -
Gently run a knife through the layers to create a swirl effect, avoiding overmixing to preserve the color contrast and prevent sprinkle bleeding.
09 -
Top with extra nonpareil sprinkles, crushed cookies, and reserved whole circus animal cookies.
10 -
Return the container to the freezer and freeze for 4 to 6 hours or until fully firm. Scoop into serving bowls and enjoy promptly.
