Place bowl over pot of gently bubbling water. Combine caramels with milk, stir often until everything's smooth, taking about 10 minutes.

Take off heat, fold in nuts and salt. Spoon tablespoon-sized dollops onto your trays, making around 30 clusters.

With a fresh bowl over simmering water, gently melt chocolate wafers while stirring until they're totally smooth, roughly 3-5 minutes.

Use forks to coat caramel clusters in chocolate. Put them back on parchment, add salt sprinkles if you want. Chill for 10-15 minutes till they set up.
