Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, milk, onion, garlic, Dijon mustard, salt, black pepper, paprika, and dried parsley. Mix thoroughly until ingredients are incorporated, but avoid overmixing.

Spread half of the chicken mixture evenly into the bottom of the prepared loaf pan.

Arrange the deli ham slices in a single layer over the chicken. Next, layer the Swiss cheese slices on top of the ham.

Distribute the remaining chicken mixture evenly over the cheese and ham filling. Press gently to seal the edges to prevent the cheese from escaping during baking.

Bake on the center rack for 45 to 50 minutes, or until a thermometer inserted into the center reads 165°F (74°C).

In a small bowl, mix together Dijon mustard and mayonnaise. In the final 5 minutes of baking, spread the Dijon-mayo mixture over the surface of the meatloaf and evenly sprinkle the shredded Swiss cheese on top. Return to oven until cheese is melted and bubbly.

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm.
