Chewy Banana Bars (Printable Version)

# What You'll Need:

→ Liquid Things

01 - 2 teaspoons of vanilla essence
02 - 1 cup of mashed ripe bananas (2 medium-sized)
03 - 1 large egg at room temperature
04 - 3/4 cup of soft light brown sugar
05 - 1/2 cup of plain unsalted butter

→ Dry Stuff

06 - 3/4 cup of mini chocolate chips (save some for sprinkling)
07 - 1/2 teaspoon of table salt
08 - 1/2 teaspoon of baking powder
09 - 1 cup of all-purpose flour

# Preparation Steps:

01 - Set your oven to 350°F (177°C). Line the inside of an 8x8 inch square pan with baking parchment, making sure it covers the base and edges.
02 - Pop your butter into the microwave for a minute to melt it. Let it cool for about 10-15 minutes so it's warm, not hot.
03 - Grab a bowl and whisk together the flour, salt, and baking powder.
04 - Mix the cooled butter with brown sugar in a bowl. Stir in the egg, vanilla, and mashed bananas until smooth.
05 - Slowly mix the dry ingredients with the wet base. Gently fold in most of the chocolate chips, keeping a few aside for topping.
06 - Pour the mix into the pan and sprinkle the leftover chocolate chips on top. Bake for 30-35 minutes until the center is cooked through and a toothpick comes out clean.
07 - Let it cool fully, then lift it out of the pan using the parchment paper and cut into slices.

# Additional Tips:

01 - Keep it in a sealed container at room temperature for up to 4 days.
02 - Can stay chilled in the fridge for 1 week or frozen for a month.
