Goat Cheese Cherry Bites (Printable Version)

# What You'll Need:

→ Base

01 - 12 baguette cuts, roughly half an inch in thickness
02 - 2 teaspoons premium olive oil (go for extra virgin)

→ Toppings

03 - 1 sprig fresh rosemary
04 - 4 teaspoons honey
05 - A quarter cup cream cheese at room temperature
06 - 24 halved cherries, pitted (frozen works too)
07 - A quarter cup crumbly goat cheese
08 - Half a teaspoon sea salt flakes
09 - A tablespoon store-bought or homemade balsamic reduction

# Preparation Steps:

01 - Brush olive oil on baguette pieces. Pop them in a 375°F oven for about 7-8 minutes. Turn them halfway through cooking. They should end up crunchy outside but tender in the middle.
02 - Arrange halved cherries facing up on a paper-lined baking sheet. Scatter rosemary bits over them and add a light drizzle of oil. Cook with the bread for 5-7 minutes. Toss the rosemary sprig when done.
03 - Throw goat cheese, cream cheese, a teaspoon honey, some lemon juice (half teaspoon), and lemon zest (half teaspoon) into your mixer or blender. Blend till you get a smooth, fluffy mixture.
04 - Smear cheese mix across all crostini pieces. Top each with 2-3 cherry halves. Finish with drizzles of honey and balsamic. Sprinkle salt flakes and tiny rosemary bits on top.

# Additional Tips:

01 - Your roasted cherries will stay good in the refrigerator up to 3 days.
02 - You can make the cheese blend ahead and keep it in a tight container in your fridge for no more than 5 days.
