Tortellini Caprese Salad (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 5 cups uncooked cheese tortellini (about 20 oz)
02 - Cherry tomatoes, cut in half (10 oz)
03 - Mozzarella pearls (8 oz package)
04 - Chopped spinach (1 cup)
05 - Fresh basil, chopped (1/4 cup)

→ Dressing

06 - Olive oil (1/2 cup)
07 - Balsamic vinegar (2 tablespoons)
08 - Minced garlic (3-4 cloves)
09 - Italian seasoning (3/4 teaspoon)
10 - Salt and pepper (1/2 teaspoon each)
11 - Optional drizzle of balsamic glaze

# Preparation Steps:

01 - Boil the tortellini following the package directions until just tender. Cool it down by rinsing with cold water. While pasta cooks, get all your other stuff chopped and ready.
02 - Grab a big bowl and throw in your cooled tortellini, spinach, tomatoes, mozzarella, basil and garlic. Pour the olive oil and balsamic vinegar over everything. Sprinkle with Italian seasoning, salt and pepper. Mix everything together well.
03 - Pop it in the fridge until you're ready to eat. Before bringing it to the table, give it another good stir since the oil settles at the bottom. Add a splash more olive oil if it seems dry and finish with a balsamic glaze drizzle if you want.

01 - Keeps fresh in the fridge for up to 5 days when stored in a sealed container
02 - If it sits in the fridge longer than a few hours, you'll need to add more olive oil
03 - Give it a good stir before eating to mix the oil back through
