Whip butter and sugar together for a minute or two until smooth and airy. Toss in flour and stir gently just until everything comes together.

Pack the dough into a ball, cover with plastic wrap, and stick in the fridge for at least an hour.

Flatten dough between 1/4-1/2 inch and use cookie cutters to make shapes. Let the cut shapes cool while your oven warms up.
