Spoon portions of the beef mixture into each muffin cup, pressing up the sides to create a well in the center.

In a separate bowl, mix cream cheese, shredded cheddar cheese, and chopped jalapeño if desired until smooth.

Place a spoonful of cheese filling into each beef well. Top with remaining beef mixture to completely encase the filling.

Bake for 20 to 25 minutes until beef is thoroughly cooked and tops are golden brown.

Broil muffin poppers for 1 to 2 minutes for a crispy top if preferred.
