Tater Tot Burritos (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 2 tbsp olive oil
02 - ⅓ cup half-and-half
03 - 8 breakfast sausage links, casings off
04 - 8 eggs, whisked lightly
05 - 2 cups frozen tater tots
06 - Kosher salt and black pepper to taste

→ Burrito Fillings

07 - 1 cup Monterey Jack cheese, shredded
08 - ¼ cup fresh cilantro, chopped
09 - 8 medium-sized flour tortillas (8-inch)
10 - 1 cup cheddar cheese, shredded
11 - 2 Roma tomatoes, diced up
12 - 1 can (16 ounces) refried beans

# Preparation Steps:

01 - Turn your oven to 400°F. Bake tater tots 20-25 minutes until they're crispy and golden brown.
02 - In a large skillet, heat olive oil over medium-high. Toss in sausage, breaking it apart, and cook for about 3-5 minutes until golden. Leave about a tablespoon of fat behind.
03 - Use the same skillet to cook eggs over medium heat. Add the half-and-half as eggs start setting up. Sprinkle in salt and pepper. Stir and cook gently for 3-5 minutes until they're soft and creamy.
04 - Grab each tortilla and spread refried beans all over. Pile on the tater tots, sausage, eggs, shredded cheese, fresh tomatoes, and cilantro. Roll them up tightly after folding in the sides.
05 - Lay rolled burritos seam-side down on a baking sheet. Bake for 12-15 minutes until they're warm and the cheese is melted.

# Additional Tips:

01 - Wrap tightly in plastic or foil and store in the freezer for up to 3 months.
02 - Reheat directly from frozen: heat in microwave for 1-2 minutes per side, then crisp up with a skillet or oven if you'd like.
