Peas & Greens Slow Cook (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 1 big ham bone with chunks of meat attached
02 - 16 ounces dry black eyed peas
03 - 2 - 3 cups shredded collard greens
04 - 3/4 cup wild rice

→ Aromatics & Liquids

05 - 1/2 big sweet onion, chopped
06 - 3 cloves garlic, finely chopped
07 - 64 ounces chicken broth
08 - 8 ounces tomato sauce
09 - 1 tablespoon apple cider vinegar

→ Seasonings

10 - 1 teaspoon salt or Cajun seasoning
11 - 2 teaspoons garlic powder
12 - 2 teaspoons onion powder
13 - 1/2 teaspoon cayenne pepper
14 - 1/2 teaspoon black pepper

# Preparation Steps:

01 - Dump your black eyed peas in a big strainer and wash with cold water. Pick out any bad or weird-looking beans and debris.
02 - Put the ham bone in your slow cooker with the onion, chopped garlic, chicken broth, seasonings, vinegar and tomato sauce. Mix gently before adding your beans and greens.
03 - Put the lid on and cook on High for 2 hours, then stir in the wild rice.
04 - Put the lid back on and keep cooking on Low for 4 more hours.
05 - Gently take out the ham bone and trim off any meat still stuck to it. Toss the meat back in, give it a stir, and cook on Low another 30 minutes to an hour. Before serving, skim off any fat floating on top.
