Heat your skillet on medium, then toss in the butter. Let it melt until it’s shiny and coats the surface.

Gently crack the eggs one at a time into the warm skillet. Sprinkle with salt and pepper, and cook just until the yolks are soft and the whites are firm. Remove with care.

Lay one tortilla flat in the pan. Sprinkle half the cheese evenly, making a nice cheesy base for your layers.

Place your cooked eggs on the cheesy layer. Add avocado slices around the eggs, then sprinkle the last bit of cheese on top.

Place the second tortilla on top. Cook for a couple of minutes until the bottom is a deep golden color, then confidently flip to cook the other side so both end up crispy and the cheese melts perfectly.

Slide the hot quesadilla onto a cutting board, slice into triangles, and dig in while it’s warm and gooey.
