Heat your oven to 350°F. Coat an 8-inch round or springform pan with nonstick spray so things don’t stick.

Lay almonds flat on a small baking tray. Bake for 5 minutes until you see a golden color. Keep an eye on them to avoid burning. Cool them after removing.

Use a medium mixing bowl to blend the almond flour, baking powder, and salt. Mix until it’s all combined.

Take a bigger bowl and whisk together the eggs, maple syrup, oil, and the extracts (almond and vanilla). Keep going until it’s smooth.

Slowly mix the dry ingredients into the wet bowl. Stir it well, getting rid of lumps.

Transfer your batter to the greased pan. Sprinkle the toasted almonds evenly across the top.

Let it bake for 20–25 minutes. You’ll know it’s done when the top is golden and a toothpick poked inside comes out clean.

Cool the baked treat while still in the pan. Add an optional dusting of powdered sugar and some extra almonds before serving.
