# Preparation Steps:

01 - Preheat oven to 350°F (175°C). Line a baking sheet with a Silpat liner and set aside.
02 - In the bowl of a stand mixer, beat softened butter with granulated sugar until mixture becomes light and fluffy.
03 - Incorporate egg yolks into the mixture one at a time, beating well after each addition.
04 - Mix in mint extract, purple food coloring, and salt until evenly blended.
05 - Add all-purpose flour, baking soda, and baking powder. Mix on low speed until dry ingredients are just combined with wet mixture.
06 - Stir candy sprinkles and mini candy-coated chocolate chips into the dough until evenly distributed.
07 - In a shallow bowl, combine white and pink sanding sugar. Set aside for cookie dough coating.
