Preheat oven to 350°F (175°C). Line a baking sheet with a Silpat liner and set aside.

In the bowl of a stand mixer, beat softened butter with granulated sugar until mixture becomes light and fluffy.

Incorporate egg yolks into the mixture one at a time, beating well after each addition.

Mix in mint extract, purple food coloring, and salt until evenly blended.

Add all-purpose flour, baking soda, and baking powder. Mix on low speed until dry ingredients are just combined with wet mixture.

Stir candy sprinkles and mini candy-coated chocolate chips into the dough until evenly distributed.

In a shallow bowl, combine white and pink sanding sugar. Set aside for cookie dough coating.

Using a small scoop, form dough rounds. Roll the tops of each dough round in the sanding sugar mixture.

Arrange sugared dough balls on prepared baking sheet. Bake in the center of the oven for 12 minutes.

Remove from oven and allow cookies to cool on tray for several minutes before transferring to a wire rack to cool fully.
