Thai Fried Chicken Sandwich (Printable Format)

# Needed Ingredients:

01 - 4 boneless, skinless chicken thighs
02 - 1 cup coconut milk
03 - 1 tablespoon curry powder
04 - 3 cloves garlic, minced
05 - 1 tablespoon fresh ginger, grated
06 - 1 teaspoon salt
07 - 1/2 teaspoon granulated sugar

08 - 1 cup rice flour or cornstarch
09 - Salt, to taste
10 - Black pepper, to taste

11 - 3 cups vegetable oil for deep frying

12 - 1/4 cup Thai chili sauce
13 - 1/4 cup mayonnaise or plain yogurt
14 - 1/2 cucumber, thinly sliced
15 - 1/2 cup pickled carrots, thinly sliced

# Preparation Steps:

01 - In a large bowl, combine coconut milk, curry powder, minced garlic, grated ginger, salt, and granulated sugar. Add chicken thighs and coat evenly. Cover and refrigerate for at least 1 hour or up to overnight.
02 - On a plate, mix rice flour or cornstarch with salt and black pepper. Remove chicken from marinade, letting excess drip off, and dredge each piece in the dry mixture, pressing gently to ensure even coating.
03 - Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Working in batches, add coated chicken thighs and fry for 5 to 7 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack or paper towels to drain.
04 - In a small bowl, whisk together Thai chili sauce and mayonnaise or plain yogurt until smooth. Thinly slice cucumber and pickled carrots, and wash and dry fresh cilantro and Thai basil. Lightly toast buns until warm and slightly crisp.
05 - Spread chili-mayo sauce on both halves of each toasted bun. Place a fried chicken thigh on each bottom half, top with cucumber slices, pickled carrots, cilantro, and Thai basil. Cover with top bun and gently press to secure.
