Spicy Chicken Minis (Printable Version)

# What You'll Need:

01 - 1 1/2 pounds chicken breasts, thinly sliced.
02 - Regular salt, cracked black pepper and powdered garlic for flavor.
03 - 1/2 cup all-purpose flour.
04 - 1/4 cup cornstarch.
05 - 1 cup buttermilk.
06 - 1 tablespoon spicy sauce.
07 - 1 large egg.
08 - 2 cups crunchy Panko crumbs (grab extra if needed).
09 - Frying oil, vegetable or canola type.
10 - 12 slices of melty mozzarella.
11 - 12 mini buns for sliders.

# Preparation Steps:

01 - Sprinkle both sides of chicken with salt, pepper and garlic powder until evenly coated.
02 - In your first bowl, stir flour with cornstarch, whisk egg with buttermilk and spicy sauce in second bowl, and dump bread crumbs into third bowl.
03 - Roll chicken in the flour mix first, dunk in wet mixture next, then cover with crumbs. Pat firmly so crumbs stick well.
04 - Pour oil in pan and heat to medium. Fry chicken about 2-3 minutes each side until it hits 165 degrees inside. Don't overcrowd your pan.
05 - Combine all bang bang sauce ingredients in a small bowl and put aside.
06 - Trim chicken to fit your buns, stack on rolls, add mozzarella so it melts slightly, then drizzle bang bang sauce over top.

# Additional Tips:

01 - You can hold these in a 325 degree oven for up to 60 minutes.
02 - Let your bang bang sauce sit out until it reaches room temp.
03 - Make sure chicken is fully cooked with no pink parts in the middle.
