Sprinkle both sides of chicken with salt, pepper and garlic powder until evenly coated.

In your first bowl, stir flour with cornstarch, whisk egg with buttermilk and spicy sauce in second bowl, and dump bread crumbs into third bowl.

Roll chicken in the flour mix first, dunk in wet mixture next, then cover with crumbs. Pat firmly so crumbs stick well.

Pour oil in pan and heat to medium. Fry chicken about 2-3 minutes each side until it hits 165 degrees inside. Don't overcrowd your pan.

Combine all bang bang sauce ingredients in a small bowl and put aside.

Trim chicken to fit your buns, stack on rolls, add mozzarella so it melts slightly, then drizzle bang bang sauce over top.
